Winter Salad

We were grocery shopping at Trader Joe's last week when a fellow mama, who was also trying to distract & entertain her 4yr old while frantically grabbing as much as she could from her grocery list, told me about this yummy wintry salad recipe.  She said it was the most delicious and easiest thing to whip up if your in a pinch or need to take something to someones house. . . . . and she was right on both accounts! Absolutely scrumptious and super duper easy.  And it is extremely nutritious; full of protein and fiber. . . . give it a try this weekend, you wont be sorry!

* 2 cans of garbanzo beans (rinsed and drained)
* 1 jar of fire roasted bell peppers (from Trader Joe's or similar)
* 4oz crumbled feta cheese
* 1.5 cups basil (roughly chopped)
* 2 tablespoons olive oil
* Salt & pepper & garlic to taste (garlic completely optional)

Combine all ingredients in a bowl (I cut up the roasted peppers into small bits before I added them as I don't like big slimy pieces) , mix, then refrigerate for 15-30 mins before serving.  Serve with toasted pita bread or with a toasted baguette (like a bruschetta) or use as a side dish.
