This I do not pretend to be! Mr. Hotpants is lucky if I have dinner "thoughts", far less a piping hot dinner ready on the table when he gets home! But sometimes I surprise, not only him, but myself! There are just some nights where it all comes together; meaning I have energy when I get home from work, that Emerson is in a good and easy mood, the right ingredients are in the house, and my brain can put together a menu that somewhat resembles a meal you would like to eat!
Well last night the planets collided and I made a yummy, healthy dinner for me and Mr. Hotpants.
Beet & Tomato Salad with Pink Himalayan salt
- Pre-cooked beets (we get ours from the fresh produce aisle at Trader Joe's) - cut into cubes
- Heirloom tomatoes (or whatever tomatoes you have in the house) - diced
- Red onion - thinly sliced
- Avocado - cut into cubes
- Fresh basil - cut into strips
- Olive oil
- Balsamic vinegar
- Pink Himalayan salt (Trader Joe's)
- Pepper
- Red pepper flakes
Chop up all the ingredients and put in a bowl, add the olive oil, balsamic vinegar, salt, pepper and red pepper flakes and mix it up. Put in the refrigerator for at least 10-15 minutes before serving! YUMMY . . . you could also top it off with some goat or feta cheese! (sorry for bad iPhone pics)
Mini Greek Pizza's - So good I ate 4!!
- English muffins - any kind; white, wheat, organic, etc
- Olive oil
- Goat cheese
- Fresh basil - cut into strips
- Kalamata olives - cut in half
- Black pepper
Cut English muffins in half and lay on a baking sheet. Drizzle with olive oil and lightly toast in the oven. Once they are lightly toasted, remove from the oven/broiler and top with some of the chopped basil, kalamata olives and goat cheese. Put back in the oven/broiler until the muffin is golden brown at the edges and the goat cheese is warm. Remove and sprinkle with black pepper. Enjoy!
